I love easy recipes that are full of flavour...and flexibility! Not sure if you are like me, but I tend to make most of my recipes up as I go depending on what ingredients I have in the fridge and cupboard. This recipe uses pre-cooked green lentils that I buy in the salad section of the store and keep on hand to throw in salads and sautés. I've also made a lovely salad with the lentils and roasted cauliflower with some middle eastern spices, so play around with it until you find something you like!
1 package pre-cooked green lentils, approx. 240g (in Switzerland, you can get this in the salad section of Coop)
150-200g baby green beans, trimmed and cut in half
1 baby zucchini, slice in half and then in narrow pieces so they look like a half circle
1 small red onion, peeled and thinly sliced
1 clove garlic, finely chopped
3-4 red radishes
2-3 Tbsp Olive oil
Sea salt and ground pepper
(I also add in a good sprinkle of Smiqql Flaky Salt - for this salad I used Summer Yaz, but Snazzy Sting is also delicious!)
Pour the lentils into your serving bowl. Slice radishes into thin slices and add to lentils with about 1-2 tablespoons of olive oil and a sprinkle of sea salt. Toss and set aside while you prepare the veggies.
Warm 1-2 tablespoons olive oil in a skillet over medium heat. Add red onion and garlic and sauté for a few minutes until starting to soften. Add green beans and zucchini and continue to sauté for another 4-5 minutes until veggies are soft but still a little crunchy. Pour veggies over lentil mixture in serving bowl and give it a toss. Season with Smiqql (or sea salt) and pepper and serve warm. Feel free to swap out the veggie with whatever you have in the fridge and add your favourite fresh herbs, like coriander, parsley or chives.
